Ingredients: 6oz-farm raised salmon fillet
1-mango
1-roman tomato
1/4-red onion
1-sorrono pepper
1-lime
1c-pinapple juice
1-pinapple ring slice
1Tbsp-butter
4oz-cilantro(by volume)
Directions: First, take your mango, tomato, onion, and sorrono pepper and small dice it all. Then take your cilantro and rough chop and combine all veggies in a medium bowl and combine well. Then add lime(as much as desired) and season with salt and pepper(as needed). Second, in a medium saute pan add in your pinapple juice and place over a medium-high heat and reduce to a 1/3 then add butter mix well and let sit until needed. Third, take salmon fillet and season with a little salt and pepper then place on nonstick baking pan with pinapple ring slice on top and bake at a preheated oven of 350 for 12 minutes. Fourth and finally carefully transfer salmon fillet to plate and add mango pico on side and enjoy
