Honey Ginger Glaze: 1/2 cup Orange Blossom Honey 1/2 Tablespoon fresh grated ginger 2 Tablespoons Rice vinegar Spinach Lo Mein: 1/4 cup Bean Sprouts 1 Chinese Eggplant diced 1/2 pound dried Spinach Lo Mein Noodles 2 scallions sliced oil soy sauce Salmon: oil 2 Farm Fresh Salmon Filet |
| Directions: | Mix together honey, ginger, and vinegar and marinate salmon filet. Place spinach lo mein in boiling water and cook until almost done. Remove from water rinse and set aside.Heat oil in a saute pan over med high heat, saute diced egg plant, bean sprouts, and sliced scallions. Toss in par cooked lo mein and saute. While the lo mein is finishing, in another saute pan heat oil over medium high heat, sear salmon presentation side down. A hot saute pan is essentail to acheive a beautiful caramelization of the honey and ginger. Once salmon is golden, flip skin side down and place in 350 degree oven to finish cooking. |
