Ingredients: 1 6 oz filet of Salmon
1 cup shredded coconut
1, 5 oz jar of orange marmalade or fresh
2 tbs. of Tabasco
4 oz Cilantro
1, 8 oz canTangerines
1 pinch of Lemon sea salt
2 oz Lemon juice
White pepper TT
2 oz Olive oil
Directions: Prepare and cook:
Coat the Salmon with the coconut, bottom and top, Olive oil, salt and put in oven at 350* and cook until med-rare and the coconut is toasted.
Sauce:
Combined drained tangerines or fresh, with Tabasco.
On medium heat start reducing orange marmalade, add lemon juice TT, add salt, pepper and tangerines.
At last add cilantro
Make a cilantro infused oil for the plate.
