Patty ingredients: 1 lb Salmon, chopped ½ cup tomato, diced ½ cup onion, diced ½ cup jicama, shredded ½ plantain, shredded ¼ cup canned sweet corn ¼ cup of cilantro, chopped ¼ cup Old bay seasoning, divided 1 cup of bread crumbs 1 tsp sea salt, divided 1 tsp black pepper, divided 1 cup of flour 4 eggs ½ cup oil Relish ingredients: ¼ cup tomato, diced ¼ cup onion, diced ½ cup jicama, diced ½ plantain, diced ¼ cup canned sweet corn ½ cup of cilantro, chopped 1 tsp of sugar Salt & black pepper to taste ¼ cup oil |

In a medium bowl combine Salmon with the tomato, onion, jicama, plantain, corn, cilantro, old bay seasoning, bread crumbs, ½ tsp salt, and ½ tsp black pepper. Mix well, separate into 8 equal patties. Use flour to cover Salmon patties on both sides, dust excess. Set aside. Use eggs to make egg wash and season with remaining old bay seasoning, salt and pepper. Heat oil in a medium size pan. Take one Salmon patty, dip into egg wash and place directly on frying pan. Repeat process with remaining patties. DO NOT overcrowd patties, should be able to flip easily. Cook 2-3 minutes on each side. Place patties on paper towel to drain excess oil then on serving platter. In same pan you fried Salmon heat up oil and cook onion and plantains for 1-2 minutes tossing to make sure they cook evenly. Add remaining ingredients and toss for even cooking until heated through for about 5 minutes season to taste. Pour over Salmon. |
